A lockdown cliché maybe, but banana bread is the ultimate comfort food.
Perfect to whip up with those slightly too ripe bananas, this has the added extra of delicious dark chocolate. Dark chocolate is a powerful source of antioxidants including polyphenols, flavanols and catechins (micro nutrients which help with weight management, cardiovascular diseases and even some cancers). Simple to make and perfect to enjoy with a cup of tea!
You will need:
3 large, ripe bananas
200g coconut sugar (or dry sugar alternative)
230g of flour (spelt or plain)
1 teaspoon of bicarbonate of soda
1 teaspoon of baking powder
1 teaspoon of ground cinnamon
4 tablespoons of milk (plant of dairy)
3 tablespoons of coconut oil
100g of dark chocolate chips or a chopped up bar
Line a loaf tin with baking paper and heat the oven to 180 degrees Celsius. Put all the dry ingredients into a bowl and whisk to remove lumps. Add your milk and mix again. Mash the bananas and add to together. Pop into your tin and bake for approximately 45 minutes.
Leave to cool, slice and enjoy with a cup of tea and maybe a little topping of nut butter!
