Nutty Love Bars

I'm going to call these little love bars - because it's nearly Valentines Day and also because I make them with love for my daughters Forest School lunchbox!

A mix of dates, nuts, peanut butter and anything else you fancy to make a quick and tasty snack.

You will need:


  • 15 dates chopped up nice and small

  • 3 tablespoons of peanut butter

  • 75g mixed nuts chopped

  • 75g of mixed nuts whole

  • A pinch of salt

  • Your favourite flavourings such as cinnamon or chilli

  • Mixed seeds


Once all your ingredients are set out, take the whole nuts and whizz them up in a blender until they form a powder. Add the powder to the chopped nuts, salt and peanut butter.

Heat 2 tablespoons of water with the mixed nuts until they form a paste. You may need a little more water to keep the paste consistency. Add the date paste to the mixture - stir together and put into a lined baking tray. You can also add mushed raspberries or blueberries if you reduce the date paste slightly.


Cook at 180 degrees for approximately 15 minutes - maybe a little longer and then remove and scatter mixed seeds on top. Leave to cool before cutting into bars.


Store in the fridge and enjoy with a nice cup of Chai!
